Michael and Nicole Nicholas started Aunts et Uncles, an award-winning vegan cafe in Brooklyn, in October 2020 after they both stopped eating animal products and began to devise lighter, healthier versions of the Carribean foods they'd grown up with. Leading up to the desire to start their own restaurant, the couple started experimenting with meat substitutes for their menu, which is how they were first introduced to Nowadays, a crisp and juicy plant-based chicken alternative made with just a handful of simple ingredients. Since the launch of their restaurant, Michael and Nicole have worked hard usher in a new era of plant based living while "making it in" to the Brooklyn neighborhood Michael grew up in and that Nicole has made her home. Aunts et Uncles was named one of Esquire's "Best New Restaurants in America" in 2021 and has also recently been featured by the New York Times and New Yorker magazines.
